With winter approaching, one thing that everyone wants and relishes is the soup - be it vegetarian or non vegetarian. I remembered my days in Jalandhar when at times I used to have the most delicious and flavourful Chicken Soup from a road side food cart. No fancy kitchen equipment or ingredients - just simple, flavourful and delicious Chicken Soup. I replicated that soup in my own way and got exactly the same aroma and taste and I have been making this soup for the last so many year and the taste has always been the same. Absolutely delicious - you wont regret it :) Heres how I made it: Chicken 400gm Cloves 4-5 Black Peppercorns 6-7 Bay leaf 1-2 Black Cardamom 2 Green Cardamom 2 Cinnamon Stick 1 Javitri 1pc Onions Sliced 1 big Carrots Sliced 1medium Cabbage chopped 2tbsp Ginger chopped 1tsp Garlic chopped 1tsp Green Chili chopped 1tsp Water 2lts Salt to taste Black pepper powder to taste Butter 1tbsp Besan (Chick pea flour) 1tbsp Cream 2-3tsp Oil 1tbsp Method: Firstly, heat oil in a pan - add whole garam masala and stir - once they crackle, then add the chopped ginger, garlic, green chili, sliced onions, carrots and cabbage. Stir until translucent for a couple of minutes. Now add the chicken pieces, salt and stir on a high heat for 3-4 minutes. Once you get the slight browning on the chicken - add water and mix well. Bring to a boil and then cover and simmer on low heat until the stock is reduced by half. Strain the stock and separate the cooked chicken pieces. Discard the whole spices and vegetables. Separate the cooked chicken from bones and keep it aside to be added to the soup. Now take a separate pan - melt butter and add chick pea flour - make a roux - stir on low heat until the colour of the roux turn slightly darker and you can smell the aroma of cooked chick pea flour. NOw slowly add the stock to this roux, stirring all the time to ensure that no lumps are formed. Check for salt and black pepper. Bring to a boil and simmer for a few minutes. You can adjust the consistency of the soup to your liking. Add the cream and stir well. Remove from heat immediately. In a soup bowl, add the boiled shredded chicken and pour the hot soup over it. You can even add chopped coriander if you like. Serve hot. Enjoy!!
