Wonton Soup - Top Secret Copycat Restaurant Recipe! Ingredients: 2 green onions 1/4 pound of lean ground beef 1/4 cup of finely chopped celery 1 tablespoon of finely chopped fresh parsley 1/4 teaspoon salt 1 dash of pepper 18 wonton skins 6 cups of chicken broth 1/2 cup of spinach or 1/2 cup bok choy, leaves halved lengthwise, shredded 1/4 cup of shredded carrot Directions: Reserve one green onion top for garnish chop remaining green onions Combine chopped onion, ground beef, celery, parsley, salt and pepper in a small bowl; mix lightly Place approximately 1 & 1/2 tablespoonsful of ground beef mixture in center of each wonton square Lightly dampen edges of square with water. Bring together corners; pinch to seal Set aside Bring broth to boil in large saucepan Reduce heat to medium Add 1/2 of wontons Simmer 4 minutes. Remove cooked wontons with slotted spoon; keep warm. Repeat with remaining wontons. Cut reserved green onion top into thin diagonal slices. Add to hot broth with spinach and carrot. Place wonton in soup bowls Top with broth mixture Serve and Enjoy! __________________________ Wonton Soup Ala College Inn Chicken Broth - Recipe # 2 Ingredients: 30 wonton wrappers For The Filling: 3/4 pounds of ground pork 2 tablespoons of minced celery 2 tablespoons of minced green onions 1 egg 2 tablespoons of soy sauce 1 & 1/2 teaspoons of white wine 1/2 teaspoon of sesame seed oil 1/8 teaspoon of salt 1 dash of white pepper For The Soup: 1 (48 ounce) can of chicken broth 2 tablespoons of soy sauce 1 chopped scallion Directions: To Make The Wontons: In a medium bowl mix filling ingredients thoroughly Cover wonton wrappers with damp cloth Remove only a few at a time to fill Moisten each with water Place 1 teaspoon of filling in center of each Fold over in triangle shape and seal Take the long folded side and fold it down on itself once more Take the 2 long points and bring them together at the back of the wonton Seal with a bit of water To Cook The Wontons: In medium sauce pan bring 2 quarts of water to a boil (1st boil). Add wontons, stir Cover and return to boil (2nd boil). Add 1 cup cold water and return to boil again (3rd boil). For The Soup: In large pan bring broth to a boil Add soy sauce and cooked wontons, return to boil Garnish with green onions Serve and Enjoy!
