Woo! Those pancakes were fine. So fine that I am going to share the recipe. This is from Ann Serannes The Southern Junior League Cookbook, the recipe excerpted from Southern Sideboards by the Junior League of Jackson, MS. This makes enough to feed four people. 1 3/4 cups sifted flour, 2 tsps sugar, 1 tsp salt, 1 1/2 tsps baking powder, 1 tsp baking soda, 2 eggs well beaten, 2C buttermilk, 2-4 Tbsp melted butter. Sift flour before measuring, then re-sift with sugar, salt, baking powder and baking soda in a large bowl. (Note: if you like pancakes then triple or quadruple the recipe and store in airtight container to save time.) Mix eggs and buttermilk well in a separate bowl. Add liquid to dry mix and mix well. If you like thinner pancakes add a dash of regular milk. Mix - I recommend a whisk - well until all lumps are gone. Add melted butter, mix well again. Bake on hot griddle until browned on all sides. Product recommendation here: I use a Presto Tilt N Drain Big Griddle. Its the bomb. Cooks evenly, quick to set up and easy to clean. You can do nine pancakes at a time if you dont make them too big. I like to butter my pancakes with Olivio Spreadable Butter with Canola and Olive Oil or the similar Land OLakes Butter. Its a non-hydrogenated, real butter product and spreads easy when left out at room temperature for about 10-15 minutes. I like the taste, too. Ive made blueberry and banana pancakes using this recipe. Both times it came out well. Next batch I mix up I am going to go half and half all-purpose flour and buckwheat flour to see what kind of taste I get. I mix up the following for my pancake syrup. One part honey (I like the taste of buckwheat honey but for some people regular works better because of the next ingredient), two parts Steens 100% Pure Cane Syrup and four parts pure, Grade A Amber, Maple Syrup. Each part should be about 1/4 of a cup. Thatll probably leave you enough for a second round of pancakes some other time. Note: pour all into a bowl. Microwave for about 30-45 seconds to make the honey viscous and mix it all well right before serving. Bon appetit.
