Would you believe that of all the images and statements on my website, this inauspicious image is the one that still draws the most email and ire? The image was the result of a simple experiment. I bought a dozen organic eggs at the grocery and compared them to a dozen free-range, organic eggs produced by layers at our homestead. Notice the richer, darker yolks and whites of the egg on the right? That is one of our free-range eggs. I noted that you could visually see almost no difference between store-bought organic eggs and battery farm eggs, but the difference between real free-range eggs is unmistakable. And I cited lab studies that show that free range eggs are actually low in LDL cholesterol (the bad kind), rich in HDL cholesterol (the good kind). plus carotene and other vitamins and minerals. To this day I still get battery farmers sending me irate emails to inform me that the color difference means nothing, the lab studies are a myth, I dont really taste a difference, and the only reason the free-ranged eggs look darker and denser is because the chickens are eating field greens and grubs (Duh! I know. Thats what being free-ranged is all about.)
