Wow! Sorghum! Where have you been all my life? I admit sometimes Im a little slow on the uptake (like my FB efforts) but this one Im going to post before we stray too far from Thanksgiving and too close to Christmas. So, Steve and I went on a 7 day cleanse in mid November, and, as part of that decided to stay away from wheat. So, with Thanksgiving coming up I searched for a nice wheat free recipe for muffins and found an applesauce oat muffin WITH STREUSEL TOPPING made with sorghum flour. (They could have chosen a nicer word than sorghum - but, oh well) This flour turns out to be not only gluten free, but white and very very light. The muffins were, in my humble estimation, spectacularly yummy, moist and not at all crumbly. So, heres to my latest discovery - YAY SORGHUM!! (PS I have nothing against rice flour, especially Pamelas pancake/muffin mix - but its nice to have another light flour to focus on - less grainy too) havent tried any of these recipes, but here is info on sorghum. Now well have to try the whole grains - very very curious...
