Yesterday I stopped at the local meat wholesale shop and picked up the pork shoulders for the Fair tomorrow. The bill was for 180 pounds, but the vacuum sealed packages actually added up to 190 pounds. It is a good thing that my Cook Shack Smoker is big enough for everything. I even added a whole chicken, a turkey breast and THE ENTIRE SKINNED BODY OF THE WILD TURKEY THAT TOOK OUT THE GRILL OF MY TRUCK coming home. Slow smoked for 12 hours at 200 degrees over hickory wood (cut from a tree downed by the tornado earlier this summer). The pork is now staying warm at 140 degrees until we chop and sauce it tonight and get everything prepped for the Fair tomorrow! OH YUM! BTW The empty shelve was where the poultry resided. It cooks much faster and I took it out at 3:30 am. There were 20 pork roasts all together and a couple gallons of dripping in the waste bucket..
