Yesterday spent processing ostrich. Utilization of everything.Thanx Richard Austen for organizing the Ostrich meat donation to our community who are far less fortunate. My Ostrich? The restaurant quality cuts have been set aside. The rest will be made into Biltong South African Jerky The wine cellars below the house is the perfect spot. All the hooks for hanging are already in place from the previous owner and the one before that and it goes on. Tonight Ostrich Thai spring rolls! Sunday and the The Overlook Safari Lodge The Kalahari South Africa is trading.Grateful I did not have guests in Friday and Saterday night. The chaos on main street was epic! This too shall pass. Staff will be tired of Ostrich stew! ; )
