You all know how much I love to cook and feed the people I love. I find it very relaxing and rewarding. I am lucky to be able to spend my vacation doing as much cooking as possible. Today I made Pita Chips using a straight forward Pita recipe. While the process took 90 minutes from beginning to end, there was a lot of down time so I multitasked, which is another favorite activity. I may never purchase Pita Chips again. Pita Recipe: 2 cups flour (all-puropse) 2/3 cup water 1Tsp dry yeast 2 Tbsp olive oil 1/2 tsp salt 1Tsp sugar Mix all ingredients in a bowl, cover and let stand for 30 minutes. After 30 minutes divide into 8 sections and roll flat. If using for sandwiches try to keep round. Heat cast iron skillet with a thin layer of olive oil. Cook one at a time, about 30 seconds per side over medium heat. For Chips: Cut pitas into wedges and lay flat on a cookie sheet. Brush lightly with olive oil, sprinkle with salt (I like kosher salt). Place in a 350 degree oven for 20 minutes. Let cool and enjoy! I love these with Guac or Hummus. Heidi likes Pico.
