You guys... I did it! So I bought this totally neat spiralizer contraption this summer after a phone call with my enthused sister who had purchased one. She said it was the best thing ever. So... I ordered one off Amazon and never used it. :( Frown. Yup. It sat there for months. I felt guilty, wanted to try it but then just kept enjoying my brown rice pasta instead. This all changed when... more foods started making me feel unwell like nightshades do, or I finally had recognition what was behind my super sluggish I-cant-move-days. Foods I LOVE -- rice, beans, gluten free oats. Ive been off all of them the last few weeks. So when Jaim made me tomato-less pasta sauce yesterday (so super sweet of him - see last nights post), I needed something to eat with it! Forgoing the more complicated recipe for zucchini noodles by Against All Grain that just felt more daunting than I had in me for my first try, I opted to use the easiest method possible. After setting up my spiralizer machine, and spiralizing (fun!!!), I simply sautéed them in some olive oil and added a little Celtic Sea Salt. This was the BEST meal Ive eaten in WEEKS! Oh my!! The sauce tasted even more AMAZING today and truthfully, after the flavors melded overnight, I COULD NOT EVEN TELL I WAS NOT EATING REAL TOMATO PASTA SAUCE!! Jaim even said that if you didnt think about it, you wouldnt realize you werent eating regular pasta sauce! So just wanted to share my super happy news with you. I highly recommend one of these spiralizer apparatuses -- so, so cool. I was in heaven. And blood sugars have been PERFECT! Plus, shockingly... I even got full! Win. Win. Win! ps. Can you tell good food makes me happy? Well, when you are living with umpteen food intolerances, this kind of stuff can literally change your life. Look forward to sharing more cooking successes with you as I navigate this path. As a result of these extra sensitivities being recognized, I have been following a Paleo diet the last few weeks! Not on purpose as I LOVED my lower carb gluten free (+ more) diet, but if I can live with greater health and enough energy to do what I want and need to, there will be no stopping me. Food is MEDICINE and I am finding my way there! Slowly, but surely... :) Sharing a bunch of pictures with you for anyone who wants to see how this works!
