You might be a boring-hippy-mom if you cant put down your new vegetarian cookbook and sticky notes on a Saturday night. Im addicted to colorful pretty food with amazing flavor and all the right nutrients. It only took about a year of intrest in healthy food and 7 months of experimenting with weird veggies like parsnips, leeks, diakons, butternut squash, and kale to actually appreciate the diversity of vegetables!! My point is. . . Switching to a diet where you look forward to new veggies is hard. It takes time. It takes dedication. A patient and willing husband is also helpful! :) But the road is fun, its a challenge (which if you know me is something Im always up for) and its an experiment thats not just benefitting me but the family and lucky friends I get to share these recipes with! Sidenote: this cookbook is geared towards those who prefer a very direct language with some explitives thrown in for effect. Its entertaining to say the least.
