Yum!! Vegan breakfast scramble drizzled with vegan yolk - a rich and satisfying breakfast packed with vitamins and nutrients! Sauté some chopped bell peppers in grapeseed oil and add sugar plum tomatoes, arugula, garlic, and some spices.. I opted for turmeric, cumin, coriander and a pinch of cayenne. The vegan yolk (richer than a hollandaise) was a totally experimental but successful combo of turmeric, nutritional yeast, cashew meal, cayenne, and a squeeze of lemon.. pour boiling water slowly over it while whisking, until you have a drizzle-able texture:) Nutritional yeast and turmeric are both known for their crazy good health benefits, arugulas got folic acid and vitamins A and K, and the peppers and tomatoes have all the vitamin C and carotenoids you need for the day. iconosquare/p/759525447325432333_1419043309
