Zacusca [za-kooska] is a Russian word, meaning snack. In Romanian language, zacusca is a very popular vegetable spread. The main ingredients are: grilled aubergines - dried and cut with a special wooden knife - sauteed onions, tomatoes, red and green peppers and bell peppers, sunflower oil, spices, salt and pepper. You can try mushroom zacusca, too! We prepare zacusca in autumn and we have till Christmas (maybe longer)! Here is the recipe: https://youtube/watch?v=UY9G916Ic4Q (English language) They did not grill the red peppers first (WRONG!) :( Take care: no metal should touch the grilled eggplants, use a wooden spoon, if you dont have the special wooden knife. My mother never keep the jar in her hand to fill it (she puts the jar on the table, over a metal knife blade and then she fills it with care). What if it suddenly breaks? Safety first!
