Zebra Cake From the kitchen of SweetCyn Yields 8″ round cake Ingredients: 3/4 c. white sugar 4 large eggs 1 cup fat free Greek yogurt 3/4 cup vegetable oil (I used melted coconut oil) 1½ vanilla beans – all seeds (or 2 tsp. real vanilla) 2 cups unbleached all-purpose flour 2 tsp. baking powder 1/4 tsp. salt 3 T. dark cocoa Directions: 1) Preheat the oven to 350°F. Prepare spring-form pan. Line bottom with parchment, brush with oil Set aside. 2) Blend sugar and eggs - 2 minutes. Add oil, milk and vanilla 3) Combine flour, baking powder and salt. (I ran it through my shifter.) Add the dry to wet Blend on medium until the batter is smooth and lump free. 4) Remove 2 cups of the vanilla batter & set aside Sift the cocoa over remaining batter, & combine well. 5) Spoon 3 T of vanilla batter into the center of the cake pan. Next, spoon 3 T of the chocolate batter into the center of the vanilla batter. Like a bulls-eye Continue to alternate batters until all batter is used. Bake 35-45 minutes… watch remove when batter is golden and pulling away from the sides. This is so yummy no icing needed. Enjoy!
