Zucchini Spaghetti Bolognaise What you need: To make basic tomato sauce: 10+ ripe tomatoes (depending on how much sauce you require, the more the better, can always been frozen) chopped into small pieces 1 - 2 onions, chopped finely Handful of flat leaf parsley, chopped or ripped into small pieces 3 cloves garlic crushed Sauté onions and garlic until soft on low to medium heat. Do not burn. Add tomatoes and simmer until tomatoes soft and almost purified. Approx. 15 minutes. Add the parsley and simmer for an extra 5 mins or until you are happy with consistency. Basic sauce complete. Bolognaise: 500g mince meat (lean, grass fed if possible) Ginger 1 clove crushed garlic 4 birds-eye chilli cut finely (seeds removed if you wish) optional Vegetables: You can use any vegetables you wish. I tend to use eggplant, capsicum, carrot, zucchini. Usually whatever I have in the fridge. This is where you can be creative. Add anything that your enjoy. How to: Fry the garlic, ginger, (chilli) in a small dash of olive or coconut oil for 2 to 3 mins. Add the mince. Cook on low to medium heat for approx. 5 mins or until mince almost cooked through. Add vegetables. Load up on vegetables. Now add the basic tomato sauce. Stir and simmer for 10 minutes, covered. Zucchini spaghetti: 1 zucchini How to: Finely grate the zucchini with a peeler. Heat in the microwave for approx. one minute or until zucchini is hot and soft. Does not take long at all. Prepare zucchini spaghetti onto serving bowl or plate and spoon the bolognaise on top. Ready to serve.
