Zucchini casserole You need: 2 medium sized zucchinis, cut in long strips 3 tomatoes, peeled and sliced 2 green peppers (you can use another pepper, I just like the colour combination) ! can of butter beans( washed) 2 medium sized potatoes, sliced thinly 2 tablespoons of olive oil salt and pepper to taste 3 rosemary sprigs 2 round fresh buffalo mozzarella 1/2 cup toasted pine nuts 1/2 cup fresh sage layer the vegetables in your Emile Henry or any other casserole form, starting with the zucchini, then tomato, potato, peppers and then the buffalo mozzarella, salt, pepper and a sprig of rosemary and then start over again. The last layer should be the mozzarella. Sprinkle the pine nuts over and the olive oil, but you do not even need it, if you want to go really low fat( the mozzarella has already enough fat). Now in the oven that has been preheated to 350. Cook for about 40 to 50 minutes. Remove from the oven and let sit for about 5 minutes. Sprinkle the fresh sage over, but you could also use thyme or basil...and then you eat this with a fresh baguette and it is yummy.
