cheff yasir rehman recipes Chicken chow mein Ing : 1 cup bean sprouts 2 chicken breasts, cut in strips Marinade: 1 tbsp oyster sauce 1 tsp soya sauce Salt and pepper, to taste 1 tsp cornflour Sauce: ¼ cup chicken stock 1 tbsp oyster sauce 1 tbsp soya sauce Salt and pepper, to taste 1 tbsp cornflour 4 tbsp water Other: 1 packet noodles 2 sticks celery, chopped 1 small floret broccoli, cut 1/2 cup mushrooms, sliced 1 capsicum, sliced 1/2 onion, chopped 1 spring onion, chopped Oil for frying 1/4 cup toasted sesame seeds Method : Apply marinade ingredients to the chicken, adding the cornflour last. Marinate 20 minutes atleast. For the sauce, dissolve 1 tbsp cornflour with 4 tbsp water. Whisk the water or chicken stock with the oyster sauce, soya sauce, salt, pepper and cornflour and water mixture and set aside. Soften the noodles by placing them in boiling salted water. Plunge into cold water to stop the cooking process and drain thoroughly. Heat 2 tbsp oil. When the oil is hot, add the noodles. Fry in batches until golden. Remove the noodles from the pan. Heat 2 tablespoons oil. Add the onion and the chicken. Add the rest of the vegetables separately, except for the spring onion. Add the sauce, stirring quickly to thicken. Add the green onions. Pour the cooked vegetable and sauce mixture on top of the noodles. Garnish the chow mein with the toasted sesame seeds.
