coleslaw 1 head cabbage 1 carrot 1 green or red bell pepper 1 small onion Mix all the vegetables together, and toss with 1 heaping teaspoon of salt. Let stand for 1 hour. Drain any accumulated liquid. Make up a syrup out of the following: 1 cup vinegar 1/4 cup water 1 3/4 cup sugar 3/4 teaspoon celery seed 1 teaspoon mustard seed Bring syrup to a boil, then boil for 1 minute. Let cool. Mix syrup with shredded vegetables. Pack the veggie mix tightly into jars and then pour the cooled liquid over the veggies. BWB for 15 minutes. I just opened a jar made four months ago and it was still crisp. I add a little heavy cream to mine when I serve it to make it creamy
