cornbread chicken casserole (i have no idea where i got this from i found it written on a piece of paper) 1-8.5 oz cornbread mix 1-10 oz enchilada sauce 1 can corn drained 1 small can green chiles drained ( i used rotel with chiles instead of salsa and chiles) 2 c shredded cooked chicken breast 1 c salsa 1 1/2 c mexican cheese blend cheese 1/3 c milk 1 egg 2 tblsp butter 1 tblsp fresh cilantro 1 tsp cumin 1/8 tsp red pepper preheat oven to 400*. grease 13x9 baking dish (i found this too big and used a smaller baking dish). in lg bowl stir together milk, egg, butter and cornbread mix. pour into baking dish. bake 15-20 min or until set. in another bowl combine enchilada sauce, salsa, chiles, corn, cumin and pepper. when bread is done poke holes in the top of it and pour enchilada sauce mixture over the top. spread chicken over that and then top with cheese. bake another 15-20 min.
