for folks who were interested in that recipe . . . i substituted local honey for the maple syrup, king arthur gluten free flour for the regular stuff, dark brown sugar for the two sugar types (i gotta get hip to the coconut sugar!), coconut milk for the dairy, coconut oil for the canola, and added vegan chocolate chips! okay, so maybe i changed the recipe a lot. also, baked it in a 13x9 pan for 20 minutes instead of a loaf pan. but still, yum! gluten-free, vegan banana bread with chocolate chips--tada!
