green beans and new potatoes 2 pounds fresh green beans washed and snapped 1/2 pound salt pork 1 teaspoon salt 6 or 7 medium new potatoes in a heavy dutch oven combine the beans salt and salt pork with enough water to cover over medium to high heat bring beans to a boil and cover reduce heat to low and cook for 1 hour then add the potatoes cover and cook for an additional 45 minutes remove lid and cook over low heat until the liquid is substantially reduced and beans are very tender do not let the potatoes cook to pieces
