housework done for today, or at least all I am going to get done :) Just put dinner together and popped it into the oven. Used my Meatless cookbook form Joshua and Jenna- I love it. Tonight it is essentially roasted vegetables- Yukon Gold Potatoes, zucchini, yellow squash, tomatoes and onions layered in a gratin-like dish. Used the rest of the pieces to make a quick vegetable stir fry for later. It went pretty well, if you discount the major slice I took out of my index finger- three bandaids and it is still soaking through... gotta love being on blood thinners :( The workers are nearly done for today, and pup is out lolling in the late afternoon sun. I have put my feet up and a glass of tea on the table next to me... I am done for the day. ( I live when I make something that actually resembles the photo in the cookbook :)
