i found this good roasted sweet potatoes recipe on FB 3 sweet potatoes, peeled & cut into bite size cubes 2 tsp olive oil 1 Tbsp butter 1 Tbsp brown sugar 1 tsp ground cinnamon 1/4 tsp ground nutmeg pinch of ground ginger Preheat the oven to 350 degrees F. Coat a small baking dish w/ baking spray. Peel & dice the sweet potatoes & place in the dish. Melt butter in the microwave & pour over the potatoes along with the rest of the ingredients. Add more sugar & cinnamon, as if you want. Toss to coat evenly. Bake in oven for 60 minutes (1 hour).
