ive been making a lot of bone broth lately, to help remineralize my bones and teeth. trace minerals are very important for maintaining healthy teeth, and Ive had a tooth cavity im trying to heal. anyway I save every usable scrap for broth with ham bone, chicken bones, deer bones, etc. earlier this summer I processed three eggplant from the garden and obviously saved the peels for broth the same as onions, turnips etc. anyway, i added a little too much to the stock and the strained broth was slightly bitter after the eggplant peel cooked down. i found a way to sweeten up the bitterness without really changing the taste. I added little over a teaspoon of blackstrap molasses and one medjool date to a small pot of broth for supper. it added a richness of flavor and nutrients and took the bitterness out! blackstrap molasses binds to iron for absorption in the body so I use it in lots of dishes. medjool dates are great for a not so sweet trail snack, full of energy. its good to keep both on hand, and now I have a new reason to keep them to my pantry!!
