made vegan bean and spinach enchilada casserole tonight mostly from a recipe I found but with lots of modifications and adding of more fresh stuff. No preservatives, no processed foods (aside from the canned beans but those were no preservative beans), whole corn tortillas and lots of fresh veggies. Turned out great but next time I think I will take the cover off 10-15 mins from when its done to help crisp up the top layer of tortillas a bit more.
