my mothers lebanese style spinach; to be eaten with bread or in our trianglar dough covered wraps (called fatiiya). spinach is best served at room temperature or cold; i saute onions, then when they are golden brown, put the fresh or canned or frozen spinach with them, cook on low heat with a lid n pan for a while, then take lid off to dry it out a bit. let it cool, squeeze lemon a dash of salt and serve at room temperature; great stuff and healthy as can be. prof. sam hamod
