my recipes: Heres a page from my notebook I like to call barrio delights! My recipes are influenced by other visitors to the neighborhood cause peeps indeed do come from other parts of the city to the barrio and the influence is evident in the foods and the intermingling of relations! Spicy Chimi Chinas ingredients lemon pepper chicken breasts from Dos AMigos Meat Market red bell pepper yellow chili or chili guerito liquid mesquite merinade cabbage purple onion radish egg rolls wraps (can find in produce section of the small WalMart) peanut oil margarine black pepper Mexican white cheese directions 1. Preheat oven to 350 degrees 2. place lemon pepper chicken breasts on baking sheet 3. marinade both sides with mesquite marinade 4. lightly pepper chicken breasts both sides with ground black pepper 5. place in oven at 350 degrees for 30 minutes 6. extract from oven after cooking and set to cool 7. On a cutting board, cut red pepper into bite size pieces. Next, cut stem of yellow chili and remove all the seeds. Cut the yellow chili into strips then dice. Dice purple onion Also cut and dice radish and shred and dice cabbage. Place all into a mixing bowl. 8. On a cutting board cut cooked chicken breasts into bite sized pieces 9. place cut chicken into a seperate bowl 10. place a teaspoon of margarine into frying pan on low heat 11. when margarine begins to melt, throw in bowl of diced vegetables into frying pan and lightly sautee. You dont want to do em all the way just enough so that the flavors blend well! A good indication of when this occurs is when you smell the blend in the air. 12. place mixed vegetables back into bowl and clean frying pan 13. add a light coat of peanut oil to the frying pan though, vegetable oil will also work but peanut oil is best for a nice crisp look 14. run the heat at medium and get sheet of egg roll, lay out on a flat surface. Then add chicken and mixed cut vegetables evenly on top and roll 15. carefully use tongs to hold the egg roll in place and fry until golden brown. you can do one at a time or many depending upon your skill level. 16. place on serving tray until cool then shred or crumble Mexican white cheese on top *makes a great after school snack
