ok here is a great burger recipe for people who really enjoy a gourmet burger,you will need atleast 1 1/2 lbs of ground sirloin 1med size sliced vidalia onion 1/2 pk of fresh sliced white mushrooms 1 pkg of thicksliced applewood smoked bacon 1/2lb of blue cheese 1/2lb smoked gouda cheese 6fresh kaiser rolls toastedinside 6 eggs over med kosher salt first in a med fry pan start cooking the bacon do not add anything to the pan (no oil or spray) make your patties, do not,really do not add anything to meat just sprinkle kosher salt on both sides i usually make 1/2lb burgers, to allow for shrinkage put them on the side when the bacon is done put it on some paper towels, leave the grease in the pan next throw ur mushrooms and sliced onions in and cook until browned and soft i usually sprinkle a lil garlic powder on them,your choice now throw ur patties in the pan with a lil butter added to bacon grease, the trick to this burger is to just turn it one time thats right ! you only flip the burger once and for the love of god ,please dont be one of those people that uses your spatula to squish the life out of your burger, that is taboo, do not,i repeat do not squash your burger flat with your spatula, it will ruin your burger. the juices are important to meat, if you leave it alone i promise you will see what im talking about. squashing a burger lets all the juices burn up in pan and dries out burger which makes it chewy after burger has a good brown crust on the one side u will notice it is cooked 1/2way thru, thats how u know its time to flip it. so now the next time you flip it ,it will be going to ur bun once you take ur burgers out leave the pan heating,put burgers aside to rest, now fry six eggs over med. as soon as they r done ur ready once u toast ur buns put a dab of mayo on both halfs then put burger then bluecheese then smoked gouda then onions and mushrooms then bacon now add 1 egg to each burger and put the top of the bun the most important things to remember are as follows add nothing to ur ground sirloin salt bothsides of patties with kosher salt do not i cant stress this enough, do not squash the juice out of burgers and only flip the burger 1 time once u eat it u will understand about the egg and why i said not to squash burger juice out of it i call them jimmys belly busters i know this seems like alot, its really easy, it just takes longer to write than to do all of this, but if i dont explain it you will add all kinds of spices to it and flatten the heck out of the burgers, im asking you to trust me on this one, u will love it
