peach cake Ingredients: 1/4 cup butter 1/2 cup light brown sugar, packed 2 cups sliced drained peaches 2 eggs 1 cup granulated sugar 1 cup sifted all-purpose flour 1 teaspoon baking powder 1/4 teaspoon salt 1/2 cup hot water 1 cup almond topping Preparation: Melt butter in a 9-inch square baking pan. Sprinkle brown sugar over the butter. Spoon fruit over the brown sugar. Beat eggs until light and lemon colored; gradually beat in granulated sugar. Sift together the flour, baking powder and salt, and add to the egg mixture, alternating with the hot water. Pour batter over peaches. Bake at 375° for about 30 minutes. Cool in pan for 10 minutes, then turn upside-down onto a serving plate.
