BEGUN BAHAR Ingredients ------------ Aubergines/Brinjal (small and long ones, not much skinny) - 6-7, slit through the middle to create 4 sections keeping it as a whole Ginger Paste - 1/2 tsp Garlic Paste - 2 tsp Onion - 1 medium size, chopped Green chilli paste - 2 tsp Yogurt - 1/2 cup Poppy seeds Paste - 1 tbsp Bay leaves - 2 small Onion seeds/Kalonji - 1/2 tsp Red Chilli whole - 2 Turmeric powder - 1/2 tsp Cumin powder - 1/2 tsp Dried fenugreek leaves/kasuri methi - 1 tsp Garam masala powder - 1/2 tsp Coriander leaves - chopped, 1/2 cup White oil Salt to taste Recipe ------ 1. Heat 1 table spoon oil in a wok. Saute aubergines on medium heat for 5-7 minutes. Drain the oil and keep aside. 2. Add some more oil in the wok. Add bay leaves, onion seeds, and whole red chilli in the wok and saute. 3. Add onion and saute for 1-2 minutes. Add ginger and garlic paste, saute for few mins so that the raw flavor of garlic reduces. 4. Add green chilli paste, turmeric powder, and cumin powder. Saute for 1-2 mins. 5. Add yogurt, poppy seed paste salt to taste and 1/2 cup of water. Stir cook and bring to boil. 6. Add aubergines, cover the lid. Cook on medium heat for next 7-8 minutes until the aubergines are tender and soaked the masala. 7. Add kasuri methi and garam masala. Garnish with chopped coriander leaves. 8. Serve hot with rice or roti or parantha.
