so i bought a couple of boston butts friday morning that were extremely cheap compared to what i pay for them locally. i have a 40 pound sack of evaporated salt out in the barn. i also have access to a refrigerator out there in the barn that is currently empty, with the exception of a couple dozen eggs and said boston butts. could i cure those boston butts like i would a ham or bacon and smoke them as soon as the weather gets a little cooler down here?
