this makes a pretty salad.....lettuce of your choice....tomatoes ( mine were from the garden so extra YUMMY) and mandarin oranges and some shredded cheddar ( you can add slivered almonds too if you want)....Delish and the color combination is quite lovely.....I could have sprinkled the tomatoes more so the pops of red were more evident.....I had a bunch of tomatoes scattered but when I plopped the mandarin oranges down they covered them...you could scatter the mandarin oranges too to make sure you see the red tomatoes....put a mountain of shredded cheddar in the middle and call it a day. YUM....I serve mine with honey mustard but ranch would be good with this as well. If you use almonds just sprinkle them all over like you did the tomatoes/oranges.--Tips
