If you don’t have Epicure Cherries n Berries you could use 1 tsp. each of dried blueberries, and 1 tsp. dried cherries or cranberries instead. After coming out with my blog “My Top 13 Healthy and Tasty Snack Foods that will surprise you!” I had a whole bunch of people messaging about these pancakes that I pack around with me……so here’s one of my FAVS! I like to toss my pancakes into a plastic zip bag or to go container once they are cooled, and into my cooler for portability…..sometimes I throw them into my purse if I won’t be out too long. If you don’t have Epicure Cherries n Berries you could use 1 tsp. each of dried blueberries, and 1 tsp. dried cherries or cranberries instead. Ingredients: 6 egg whites ½ cup old-fashioned oats, uncooked Dash of Epicure ground cinnamon 1 tsp. Epicure Vanilla Extract 2 tsp. Epicure Cherries n Berries 1 tsp. pumpkin seeds Cooking spray Directions: In a blender add egg whites, oats, cinnamon and vanilla extract. Blend until smooth. Heat a non-stick pan with cooking spray. Pour half the batter into the pan and sprinkle with half of the cherries n berries and pumpkin seeds. Cook until you see small air bubbles developing or 2-3 minutes. Flip the pancake and cook for an additional 1-2 minutes until golden brown. Repeat using the remaining batter and dried fruits and nuts. Cool and cut each pancake into 4 wedges. Eat right away or put away for an on the run meal. Keep chilled.
