was a time not so long ago when every grocery store, (they were called markets) had a meat market with a meat cutter. The display case was kept current with fresh beef, pork, chicken and even fish. There was no shrink wrappings, and plastic backings. The butcher would allow the customer to closely see the cut of meat and special trim and then weigh and wrap the meat. The price was written on the wrapping paper with a magic marker . It was similar to going today to a deli and getting products without the complex registers which weigh and calculate prices. Most cheeses came from under a wooden canister and were cut to desired sizes after samples were agreed upon. When did we get so complex that we needed prepacking?????
