you know Im into all sorts of things that grow in the damp Pacific Northwest forests, and one of those is truffles, but Marcus had never tasted one outside of truffle fries, and Id never cooked with one. the truffle festival was the answer, and he went all out and we brought home an oregon black, an oregon white, and a French white. the best part is that they smell so different, the French black smells like shrimp and artichokes and the Oregon white smells like asparagus and cotton candy . we were standing there with our truffle hoard when Charles Lefevre from New World Truffieres came up to us. put the Oregon blacks in whipped cream, he told us. I suggested a savory cheesecake. Do something sweet! he said. strawberry shortcake! much discussion ensued. in the end we concocted an apple crisp with fennel seed and cloves and cardamom; vanilla ice cream; and black truffle whipped cream. it was fantastic. our fungal experiences are expanding. there are more scents to add to our ever-growing catalog. oh this oregon life. its pretty grand.
