ԽՈՀԱՆՈՑ ՕՐՈՒԱՆ ՃԱՇԸ------ DISH OF THE DAY Չորեքշաբթի 19 Մարտ 2014 ================= Vegetarian kibbeh with spinach stuffing (Armenian delicious kibbeh recipe) Ingredients: Filling: 1 kg.(2 lbs) fresh spinach,cleaned,washed,cut,boiled ,drained and squeezed here ,I used 1-1/2 cup ready cooked frozen,squeezed spinach. 5 large red onions chop them with food processor 1/4 cup olive oil 1/2 cup walnuts,finely ground 1 teaspoon kosher salt 1/2 teaspoon cayenne pepper 1/4 teaspoon black pepper 2 tablespoons sumac 1/4 cup freshly squeezed lemon juice Kibbeh dough: 4 cups fine white burgol no 1 1 cup semolina 1 tablespoon flour 1 tablespoon salt 1 tablespoon red hot pepper paste Walnut sauce for topping: 8 cloves garlic 1 cup of olive oil 1 tablespoon hot red pepper paste 1/2 teaspoon salt 1 cup walnuts,medium chopped Preparation:For the filling 1.Heat the oil in frying pan,and saute the onions until transparent .Add squeezed spinach and continue cooking for another 5 minutes. 2.Remove from heat and blend in the walnuts,salt,black pepper,cayenne pepper,sumac and lemon juice to obtain slightly sour mixture .Keep aside to cool. Preparation for dough: 1.Wash the burgul and drain.Soak with 2 cups of hot water 2.Add the semolina,flour,salt,pepper paste,start knead into kibbeh dough,dipping your hands in water till the dough sticky and very soft. Preparation walnut sauce topping : 1.Use hand blender add garlic,salt, olive oil ,pepper paste and blend together ,add chopped walnuts mix for a second and keep a side . Assemble the kebbeh: 1. Divide the kibbeh dough into egg- sized pieces ,take each piece make a hole in the middle,and fill with the spinach stuffing,bring together the sides to seal and sharpen the edges. 2.Heat the oil(I use corn oil Mazola) in a deep frying pan and fry the kibbehs,until golden,immediately immerse in garlic-pepper sauce topping, drain on paper towels, and put on a serving platter,serve room temperature, or cold both are very delicious.
