1.0 PX sherry barrels are as rare as rocking horse .......... 2.0 The future of Heartwood will be to produce traditionally peated whisky matured in Australian Oloroso and PX sherry casks. We have 3 potential barrel sources. All good so far. 3.0 PX sherry and Australian Muscats are not dissimilar. 4.0 Mr Heartwood (assisted by AJ) will inspect some top quality Muscat barrels today. If the nose is good.... I think we should..... 5.0 These barrels will be sourced from a local Tasmanian Cooper. 5.1 I will post some photos of the barrels later today. 6.0 Heartwood has not produced any new whisky this year due to a lack of suitable barrels for the Heartwood style. We need to be different and in future we will not be using any Australian Port (excluding Muscats) or American bourbon barrels. 7.0 As Heartwood has a range of barrel types and peating levels we are able to take whiskies that everyone else has and produce something different and tasty eg The Beagle", through blending. Deficiencies in one barrel can be overcome by the addition of whisky with a certain characteristic that makes up for the deficiency in the other. This is hard work this blending gig. These blends are from whiskies purchased by Heartwood where we had little control 8.0 However, the barrels produced with 100% Lark spirit over the last 6 years are all absolute crackers and will be the best whisky we will make. It is our current intention not to blend these (though remember we make things up as we go along). With these whiskies we do have control of the spirit, the barrels and the maturation. This is our intended direction for the future. 8.5.1 Watch this space [ ]. Visual joke.
