9/8/2013 Tomorrow’s meal is all about eating HEALTHY. We’re starting with poached wild salmon, slowly cook with a dry white wine, a pinch of sea salt, and freshly ground pepper which makes it tender, flakey, delicious and soooooooooo good for you. We have matched it with another heart-healthy food, bright green leafy spinach. We are preparing it with rice, a little diced onion, tomato, chopped fresh parsley and dill. Taking it a step farther we’re adding a splash of white wine, salt, pepper and a dash of nutmeg, yum! To make our menu colorful and completely healthy, we have added the bright look of carrots to the mix. Carrots, as my mother use to say, are “good for your eyes.” After checking this out it is one of the few things we got right, so Mom was right all along (aren’t they always?) Our butterscotch carrots are a favorite. By taking baby carrots, and tenderly cooking them with butter and brown sugar, and adding fresh cracked peppercorns, they turn out just perfect with a zing; they’re good and good for you! Other tasty options are creamy yellow grits, fresh made quiche (crab, capers, onion, dill and parsley, and another of black bean, corn, onion, sun-dried tomatoes, parsley and salsa). We always use fresh cream, eggs, and shredded cheese to make our quiche, always fresh, always different, and always delicious! Scrambled eggs, crisp bacon, and French toast are always winners. Buttermilk biscuits warm just waiting on sweet cream butter! Our menu continues with ripe chunks of cantaloupe, and juicy watermelon. And for those who are like me and have to have a sweet at the end of my meal, we have bite size bits of cakes, cimmonon rounds, and such. FYI: Salmon is among the most heart-healthy of dishes, it is a good source of protein, as well as a rich source of vitamin A, the B-group vitamins and Omega-3oils. It also has potassium. Spinach has about 11 different health benefits, including being a great source for antioxidants. It is effective in lowering your blood pressure, and protects the eye from cataracts. It is also great for your skin, bones, brain and nervous system. Carrots are rich in beta-carotene, which is converted into vitamin A, which untimely is great for night vision
