Almost ready! I prepared my husbands dinner first but then I made the most amazing fuel for myself. I made stuffed red and green peppers (filled with vitamins A, C, & E and Folate. A good source of healthy carbs and dietary fiber). They were stuffed with quinoa (filled with protein and dietary fiber as well as folate), lentils (a good source of fiber and protein), spinach (vitamins A, K, & Folate) and tomatoes.
