Blackberry Peach Preserves Directions: 2 Cups of Blackberries 3 Cups of Peaches, blanched to remove peel and cut small. 2 1/2 Cups of Sugar 1/4 Cup of Lemon Juice 1 box Powdered Pectin Combine Blackberries, peaches, sugar, and lemon juice and simmer for about 20 mins on medium. Next, bring to a full boil for about 2-3 mins. Add box of powdered pectin. Bring back to a high rolling bowl. (Jelly bubbles jump up and grab you on high heat. Wear protective clothing. The burns hurt from hot jelly) keep at a boil for 1 min. If you have a thermometer try to get the boil up to 220F that is the temperature that pectin needs to bind with the sugar to gel. I keep plates in the freezer and when I test to see if my jelly is ready to set.. I take a spoon and drop a spoonful on a frozen plate. If it forms a skin and gets wrinkly then its ready to go into hot jars. Add lids, and tighten girl tight not man tight and then place in boiling water bath for 10 mins. After 10 mins turn off heat, remove pot from stove. Let jars sit in water for additional 5 mins. Then remove, cool and store.
