Cabernet Sauvignon (Red) A robust grape grown the world over that produces a wine rich in tannin. The characteristics of the wine can vary considerably depending on when the grapes are picked (some climates dont permit it to reach full maturity). Despite the notoriety if its name, buying a Cabernet Sauvignon doesnt guarantee you a good wine. These grapes are used to make a large range of wines, varying in price and quality. In France, Cabernet Sauvignon is often associated with other grapes such as Merlot. The Cabernet Sauvignon grape, the best-known member of the Carmenet family, is believed to be a crossing of Cabernet Franc with Sauvignon Blanc, although the French ampelographer Guy Lavignac believes, somewhat paradoxically, that “it appears to be more primitive than its so-called parents.” Whatever its precise origins, Cabernet Sauvignon is a high-quality variety producing small, intensely colored blue berries with tannic musts that are quite high in acidity. It often has a distinctive black currant flavor. The growers of Southwest France also describe it, along with other members of the Carmenet family, as having a goût sauvage – literally, a “wild taste.” It is vigorous, susceptible to oidium, and not particularly high yielding.
