Candy Apple Jelly Yields: 7 -8 ounce jars Ingredients: 1/4 tsp. cinnamon essential oil (add this just before putting into the jars) 4 cups apple juice 1/2 cup red-hot candies 1 -(1.75ounces) package power pectin plus 1 Tbs. liquid pectin 4 1/2 cups of sugar Directions: In a large pot, add apple juice, candies and pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar, return to a full rolling boil. Boil 2 minutes stirring constantly. Remove from heat skim off any foam and undissolved candies. Stir in essential oil. Pour into hot sterilized jars, leave 1/4 headspace. Process for 5 minutes in hot-water bath.
