Carrot chutney. 1) grated carrot 1 cup 2) dry red chilli 4 3) fenugreek seed ( Menthya) 6-7 4) tamarind paste 5) jaggery 1/2 spoon 6) coriander 1/4 bunch 7) urad daal 2 spoon 8) hing 1 pinch 9) oil 2 spoon 10) curry leaves Heat 2 oil in a pan, add urad daal, hing, Menthya, chillies and fry for few mins. Later add carrot and rest of the ingredients and roast for 5-6 mins. Let this mixture cool and grind to fine paste.
