Chocolate protein energy bars (adapted from betty Rocker) Yield: 3 servings 1/4 cup almonds 2 T Vegan Chocolate Shakeology or Vanilla Shakeology 1 1⁄2 tsp cacao powder pinch of sea salt 5-8 dates* - make sure they’re moist 1-2 T water cacao nibs for garnish 1. Place the almonds, protein powder, cacao powder and sea salt in a food processor. Let it run until it’s all combined. 2. While the machine is running, slowly add in the moist dates one at a time. Add the water now too 3. When the mixture clumps together, they are just right. 4. You may press them down into muffin tin cups, or into a pan. Moisten your hands if it’s too sticky. 5. Press some cacao nibs into the top and refrigerate for several hours before cutting into 3 bars (unless you used the muffin tin).  *If your dates seem too dry, pre-soak them in some water to let them absorb some moisture.
