Christmas Day Menu :-) STARTER: Brown Crab Meat and a touch of natural yoghurt and seasoning, piped onto the bottom of the plate, seasoned White Crab meat with Salmon eggs and homemade mayonnaise to hold it together released from a ramekin to sit on top of the brown meat, topped with a quenelle of homemade Mayonnaise garnished with Samphire and Dill, with a Melon and and Orange infused Jelly and a quenelle of Melon Sorbet. MAIN COURSE: Whole Wild Salmon poached without the skin infused with lemon and herbs and served with a Red Pepper sabayon, lyonnaise potatos and Mixed seasonal Vegetables. Crispy Shards of Salmon Skin. DESSERT: Peanut and Chocolate Parfait, Quenelle of Orange Sorbet, Brandy Snaps filled with Orange Cream, Salted Caramel Sauce and a Raspberry Reduction. Homemade Darjeeling Tea infused Christmas Pudding, and Homemade Creme Anglais. Fresh Ground Coffee served with Homemade Vanilla Biscuits. .................................................................................................................
