Dan took me to ALL SPICE in San Mateo for my birthday. Really exceptional, creative Indian food. Chef Sachin Chorpa used all my favourite gastronomic techniques across six courses: foam, air, dust, sous vide, pickling. My favourite part of the night? A perfectly poached sous vide egg. It was the softest poached egg I’ve ever had in my life, consistent texture throughout, and this seemed to change how it tasted…it was unlike any egg I’ve ever had before. Wow.
