Digging around in the freezer yesterday a found a freezer burned piece of tri-tip. I thawed it. Now what to do with it? How about slow cooked beef stew. This morning I looked around didnt have everything I needed but what the hell.... Cubed the tri-tip, salt pepper, dredged it in flour and browned it. Tossed it in the crock pot for 90 minutes on high with a half a cup of red wine. Threw in a shot of balsamic and two medium tomatoes sliced into 8ths and the seeds removed. I didnt have beef broth so I used chicken broth mixed with organic vegetable paste poured a cup on top. 3 hours later added potatoes, carrots, onions, celery and a big dose of garlic salt and onion salt. Cooked it on medium for 5 hours and then dropped it to low...total cooking time 9 hours and 15 minutes....we ate it with a spoon. Had La Brea rolls hot from the oven and sliced tomato on the side with olive oil balsamic. Excellent save on freezer burned beef.
