Dinner tonight was Taco Pockets 1kg mince 1 pkt Old El Paso burrito seasoning mix 1 400g jar salsa 1 10pkt of puff pastry 1 400g pkt Kraft Mexican shredded cheese 1 egg, beaten & dash of milk Allow puff pastry sheets to defrost while continuing. Brown mince, drain fat. Add seasoning with water and salsa. Mix well, simmer 5-10mins then remove from heat and allow to cool some. Heat oven to 200C. Line trays with baking paper Cut pastry sheet in half. Spoon 2 tbsp of mince and a tbsp of cheese onto the short end, fold pastry to wrap filling. Pinch or crimp ends closed. Place pastry pocket seam side down on tray. Prick pastry with fork, baste with beaten egg and milk mixture. Repeat. Bake for 15- 20 mins or until pastry puffed and golden. (Bakes better one tray at a time on middle rack) Serve with a simple salad. Eat -yum! Makes 20 pockets.
