Eggless cupcakes: These super soft cupcakes and the aroma of their baking remind me of my childhood days. Ingredients: 1 cup flour, 1 cup powdered sugar, 1/2 cup fresh milk cream (malai) 1/2 tsp baking powder 1/8 tsp baking soda 1/2 tsp of vanilla essence Enough milk to make the batter if pouring consistency. Preheat oven at 180degrees. Line cupcakes, I I could make around 10cupcakes. so adjust accordingly. Sift flour, bp and bs 2-3 times and keep aside. Mix cream and sugar in a bowl and keep stirring till the sugar looks dissolved( 1-1 1/2 minutes). Now add little bit of flour and little cold milk, mix well. Keep doing it until all the flour is finished and its well combined, do not over beat. mix enough milk just to make it of pouring consistency. Now pour it in the moulds using a spoon and fill till 2/3rd. and bake for 20-25 mins or till the toothpick comes out clean. Serve warm.. Enjoy
