Eggplant can seem like a very strange and intimidating vegetable. Many times people will use eggplant in two ways: Ratatouille or Eggplant Parmesan. In actuality there are many ways to use eggplant from veggie burgers to Chinese dishes. In this post I will show you how to prepare an Americanized version of Chinese Steamed Eggplant based of a recipe I found in “From Asparagus to Zucchini: A Guide to Cooking Farm-Fresh Seasonal Produce.” A-Z is one of the cookbooks LFC provides to its clients, to help them manage the large amount of produce they receive. The cookbook is available from Fairshare CSA Coalition in Madison, WI. What you’ll need: 1 large eggplant (or two smaller eggplants) cut into about 6 wedges 1 large green onion, cut into 2-inch pieces (I used a 4 very small white onions) 2 cloves of garlic, minced 2 tablespoons of oil (vegetable, olive, sesame, etc.) 3 tablespoons of soy sauce (add more if desired) ¼ teaspoon sugar Pinch of black pepper Step one: Cut your eggplant and steam in steamer, if you don’t have a steamer place in pan with VERY little water. Steam until tender, the cookbook suggests 30 minutes, I feel this is too long as it made the eggplant quite mushy; I’d suggest no more 15 minutes. Step two: While waiting for your eggplant to steam mince your garlic, chop your onion and chop up any other vegetable or proteins you’d like to add. I added carrots and potatoes, and could see red meat going very well in this dish. Mix your oil, soy sauce, sugar and black pepper in a bowl. Step three: Once your eggplant is done it’s now time to fry! In a pan put in sauce and add garlic and onion. After about a minute or two add in anything else you want in you dish. Once everything looks about cooked, about five to ten minutes (will be longer if proteins are added), throw in your eggplant and cook for three additional minutes. Step four: Smell! If you think it needs more flavors add some, I suggest a little salt and some fresh herbs if available. Step five: Plate, Eat, and enjoy! Posted by: Levi DalNodar LFC Service Coordinator
