Enjoy a family recipe from Kristina! My great granny, Mary Gladstone, was very feisty, old fashioned, and a great cook. She didnt normally cook super healthy...her favorite foods being country ham, coffee, and werthers original hard candy. This, however, didnt seem to affect her, she lived to celebrate her 103rd birthday!! Of course none of her recipes were written down. Everything was a pinch of this and a dash of that. Therefore, Ive had to do research and test different recipes to try and come up with her recipe for broccoli cheese soup. This recipe is the closest to her original broccoli cheese soup. Broccoli Cheese Soup 1/2 C butter 1 small sweet onion finely chopped 1/3 C all purpose flour 6 C of milk (I use skim but you can use any) 4 large heads of broccoli, stems removed, chop florets into bite sized pieces Pinch of nutmeg 3 C of sharp cheddar shredded Salt and pepper 2 C of vegetable broth (I use water) In a large pot, melt butter over medium heat. Add onion and cook for 3 minutes until soft. Sprinkle flour over the onions and stir to combine, cooking for about 1 minute. Slowly whisk in the milk. Add nutmeg, broccoli, a dash of salt, and black pepper to suit your taste. Cover and reduce the heat to low. Simmer for 20-30 minutes, or until broccoli is tender. Add cheese. Stir to melt. Once everything is combined you can use an immersion blender to blend up the broccoli or leave it whole. Add vegetable broth (or water) to get to the consistency you like. Enjoy!
